Well, hello there!

Well, I've written this post about 5 times already and I think I keep over-thinking it.  So, I'm just gonna go for it and write and then post it.  If there are mistakes or proofing errors, I apologize in advance, but I want to actually start this blog and I won't if I try to make it "perfect".  So, here goes......

My name is Aimee.  I'm a wife to Mike and a stay at home mom to three sweet little kiddos.  Michael, my oldest is 5 and enjoying his first year in real school and he LOVES it....Ahh!  I have a kindergartener (I still can't believe that!).  My next is Ethan and he just turned 2 last month.  He just started his first year of Wee Kare which is a 2 day program through the church.  He is really flourishing and soaking up everything he's being taught.  My baby is Shiloh.  She is 5 months old and just the sweetest baby in the world and full of smiles and giggles.

So, I spend a lot of time in the kitchen.  Mike, the best husband ever, and I decided a long time ago, that food needed to be nourishing, as well as tasty, so we are pretty particular about the foods we eat. I'll go into more detail in another post, but for the most part, we follow the Primal/Paleo guidelines.  It was a journey getting to this point and sometimes we splurge (GASP!!  I know!  I admit it!), but for the most part, we are pretty strict.  We believe that God created our bodies to fight sickness and if we are too busy fighting the artificial/pesticide/gmo/processed foods we eat, there is not much left of our immune systems to fight sickness.  We have found this to be true over and over again.....so we try not to cheat.

Anyway, if I keep going on that, I'll have two posts in one....and I want you to come back, so I better not spill all my beans at once :)

Now, to get to the good part.  I try a ton of recipes to keep life interesting and I also create some and modify others to fit our diet.  In this blog I hope to be able to share these recipes with you.  Last night, we had meatballs.  My recipe is inspired by this one, but I've changed it enough, I think I can call it my own?  Either way, it's delicious!  Here we go!!  PS.  I'm not the best picture taker so please bear with me while I learn :)

















Italian meatballs

2lbs ground beef
2 eggs
¾ c fresh grated parmesan cheese (omit if dairy free…it’s still good)
1 tsp garlic powder
1 tsp salt
1 tsp black pepper
1/3 c raw milk (or you can sub tomato sauce if you are dairy free)
1 Tbsp dried oregano
1 Tbsp basil
2 tsp anise seeds
1 jar pasta sauce

Place pasta sauce in a large skillet and turn heat on low.
 
Combine all ingredients except beef and pasta sauce in a bowl.  Mix well.  Add beef.  Using your hands, work the beef into the mixture until fully incorporated.  Roll mixture into golf ball size balls and place into pasta sauce.  Turn heat up and bring to a boil.  Reduce heat to medium low and simmer for 20 minutes.  Turn meatballs and continue cooking for 20 minutes.  

Serve alone or with spaghetti squash or pasta.
